Duck fillets with Quick Orange Sauce

Serve this for a very special dinner occasion. You can prepare the sauce in advance so you only need to fry the duck and cook the vegetables at the last minute.

  1. Put the rind of one orange and the juice of two oranges in a small pan with the remaining sauce ingredients. Bring to boil and simmer gently for 5 minutes or until reduced by about one third or to taste.
  2. Peel and slice the remaining orange and add to the pan. Set aside until later.
  3. Meanwhile slash the skin of the duck fillets diagonally (to help drain out the fat). Preheat a skillet or ridge frying pan until really hot and place the fillets skin side down first. Cook for three minutes or until quite well browned then turn over and repeat on the second side.
  4. Then reduce the heat and leave the fillets to cook gently for a further 2-3 minutes until pink or cooked through to your liking.
  5. Bring the sauce back to a gentle boil now, the serve spooned over the cooked duck, with the new potatoes and steamed courgettes.
