Grapefruit Prawn and chilli Noodles
Enjoy this quick and elegant supper dish, with its surprising hint of chilli and fruit, for any occasion.

Ingredients:
- 1tbsp sunflower oil
- ½ - 1 red chilli, deseeded and finely shredded
- 1-2 cloves garlic, chopped
- ½ a Chinese cabbage, shredded
- 1 Pak Choi, divided into leaves
- 250g (about 4 segments) Chinese egg noodles
- 2-3tbsp sesame oil
- 2 white grapefruits, peeled and segmented
- 250g large shelled prawns, halved
- 2tbsp Thai fish sauce
- 2tbsp soy sauce
- 1 bunch fresh coriander, trimmed
Method:
- Heat a little sunflower oil in a wok or large frying pan and quickly fry the chilli and garlic for one minute.
- Add the cabbage and Pak Choi and stir-fry for 2-3 minutes or until just softening.
- Meanwhile put the noodles into boiling water for 2-3 minutes, then drain well and stir in the sesame oil. Keep warm.
- Add the grapefruit segments, prawns, fish and soy sauces to the cabbage an stir-fry for another 2 minutes. Stir in the fresh coriander and serve immediately with the noodles.
