Chicken and Grapefruit Wraps
All the family will love these tasty and healthy wraps for a quickly made lunch or for easy eating on picnics and days out.

Ingredients:
- 2 boneless chicken breast fillets
- Salt and black pepper
- Lemon juice
- Olive oil
- 1 bunch spring onions, trimmed and shredded
- ¼ cos lettuce, shredded
- Small bunch rocket
- 1 ruby or pink grapefruit, skinned and segmented
- 4 ready to use Tortilla wraps
- 4tbsp hummus or good mayonnaise
Method:
- Cut diagonal slits in the chicken. Brush with lemon and olive oil, sprinkle with seasoning and grill for 5 minutes on each side until cooked through.
- Mix the spring onions, lettuce and rocket together. Cut the cooked chicken into strips.
- Lay out the wraps and spread a little hummus on each one. Divide the salad between each wrap, then a few grapefruit segments and strips of chicken and roll up tightly. Wrap tightly in cling film for travelling or cut in half diagonally and serve.
