Chicken and Grapefruit Wraps

All the family will love these tasty and healthy wraps for a quickly made lunch or for easy eating on picnics and days out.

  1. Cut diagonal slits in the chicken. Brush with lemon and olive oil, sprinkle with seasoning and grill for 5 minutes on each side until cooked through.
  2. Mix the spring onions, lettuce and rocket together. Cut the cooked chicken into strips.
  3. Lay out the wraps and spread a little hummus on each one. Divide the salad between each wrap, then a few grapefruit segments and strips of chicken and roll up tightly. Wrap tightly in cling film for travelling or cut in half diagonally and serve.
