Pork in Orange and Ginger Marinade
You can't beat pork fillet for a really quick small roast particularly when it is coated in orange and ginger.

Ingredients:
- 1 large pork fillet, trimmed of any skin or sinews
- Rind and juice 1 large orange
- 2cm piece fresh ginger, peeled and grated
- 2tbsp maple syrup
- Seasoning
- Mixed long grain and wild rice, cooked
- Flat leaf parsley
Method:
- Preheat the oven to 210C/425F/gas Mark 7. Place the pork on kitchen paper to dry off completely.
- Mix together the orange rind, ginger, garlic and 1tbsp maple syrup. Rub all over the pork. Wrap tightly in foil and leave for 15-30 mins if possible, then fast roast for 15 minutes.
- Open out the foil and roast for a further 5 minutes until lightly coloured.
- Tip the orange juice, remaining maple syrup and roasting juices into a small pan and cook fast to reduce by about half. Add seasoning to taste.
- Serve the pork, thickly sliced, on a bed of mixed rice, with the juices poured over and sprinkled with parsley.
