Red Grapefruit Winter Salad
A crisp refreshing salad can be the perfect antidote to dark winter days and too much central heating, or the ideal way to start off your spring diet. Serve as a light main meal or started.

Ingredients:
- ½ head radicchio, or Oakleaf lettuce or other red leaves
- 2 small red onions, thinly sliced
- ½ bunch or about 50g radishes, trimmed and thinly sliced
- 2 red grapefruits
- 150g feta cheese
- 50g pine nuts, toasted
- Balsamic vinegar
- Olive oil
- Salt and black pepper
Method:
- Separate the radicchio leaves into a salad bowl along with the trimmed lettuce, sliced onions and radishes.
- Peel the grapefruit (over a small mixing bowl to catch all the juices) removing all the white pith, then slice into segments and add into the salad ingredients. Squeeze any juice from the grapefruits skins into the bowl.
- Crumble the cheese over the salad along with the pine nuts and toss lightly.
- Whisk the grapefruit juice with 2-3tsp balsamic vinegar, 3-4 tbsp olive oil and seasoning to taste. Pour over the salad, gently toss again and serve.
